Key Distinguisher from French Fries: Tempering of Curry leaves and Black Pepper. The crispy flavor with curry leaves and pepper tempered in oil have a different essence and taste all together.
Tempering occurs in heated oil. Benefits of tempering involve release of essential oils form ingredients.
Ingredients: 2 potatoes, curry leaves, 1 spoon black pepper powder, 3 spoon oil. That Is It!
other spices – optional- cinnamon powder, coriander, salt -these are optional. I made only with pepper.
Step 1. Take 2 potatoes and curry leaves

Step 2. Peel the potatoes and cut the curry leaves, wash both.

Step 3. Cut the potatoes in shape of French fries

Step 4. Heat 3 spoon of oil in a frying pan. Let it heat. As tempering occurs in heated oil. Benefits of tempering involve release of essential oils form pepper.

Step 5. Put one full spoon of black pepper powder in heated oil. Close heat in case, it seem over heated. To avoid flames. Oil catches flames when over heated. Immediately after put the curry leaves.
Note: Different oils have different heating temperatures, I used mustard oil and it took time to heat, while some heat up much earlier.

Step 6. Fry the curry leaves for a while and put the cut potatoes in it.

Step 7. Fry till potatoes are golden and crispy. For me I took two potatoes of small size. So I was done in 2 minutes on full flame.

Step 8. Ready to serve and enjoy. Put more spices, as much as you like to enjoy the flavor. Add salt if you like. And enjoy the crispy flavor with curry leaves and pepper tempered in oil have a different essence and taste all together.
